Easter Side Dish: #3 Herb & Garlic Red Roasted Potatoes

Herb & Garlic Roasted Red Potatoes is a nice substitution for potato salad.


2 pounds new red potatoes, quartered with skins left on
1/2 cube butter, melted
1/4 cup good olive oil
1 tablespoon grated garlic
2 teaspoons parsley
1 teaspoon dried oregano
salt & pepper, to taste

Set oven to 425 degrees.

Toss all ingredients together in baking dish to evenly coat potatoes.  Bake until fork tender.  (depending on time of year (re: hardening off of potatoes) bake for 20 to 30 minutes) Serve hot or at room temperature.  Easy, simple and so good!
